This dish features a blend of nutritious ingredients, including crispy bacon, soft potatoes, and fresh green beans, all seasoned with the tangy taste of Ranch dressing.
Ingredients:
½ stick butter (4 Tbl.)
1 small sweet onion, cut into thin wedges
1 medium regular red potato, unpeeled, ½-3/4″ dice
¼ tsp. coarse ground black pepper
3 strips crisp-cooked bacon, thinly sliced
½ tsp. finely minced garlic
1 ½ tsp. dry Hidden Valley Ranch Salad Dressing or Dips Mix (either work)
1 (14.5 oz.) can green beans, drained
Directions:
Melt Butter: In a medium saucepan or small frying pan, melt butter over medium heat.
Sauté Onion and Potato: Add onion, potato, and pepper to the melted butter. Sauté until potatoes are fork-tender.
Add Bacon and Seasonings: Stir in crisp-cooked bacon, minced garlic, and Ranch Mix. Mix well to combine.
Fold in Green Beans: Gently fold drained green beans into the mixture. Heat through, simmering gently, and stir occasionally to combine flavors without breaking the beans.
Season to Taste: Adjust seasoning with additional pepper if desired. Add salt sparingly, as Ranch Mixes are already salty.
Refrigeration: Store leftovers in an airtight container in the refrigerator for up to 3 days.
Freezing: While best enjoyed fresh, you can freeze leftovers in a freezer-safe container for up to 1 month. Reheat gently on the stovetop or in the microwave.
