Potato Beef Casserole

Imagine the ultimate comfort food fusion: a casserole that marries the heartiness of meatloaf with the indulgence of loaded mashed potatoes. Ingredients:

  • 1 lb ground beef, extra lean

  • 1/2 cup onion, diced

  • 2 tbsp brown sugar

  • 1 tbsp Worcestershire sauce

  • 1 cup seasoned Italian bread crumbs

  • 1 egg

  • 1 1/2 cups water

  • 1/2 cup milk

  • 1 (4 oz) package of garlic-flavored instant mashed potatoes

  • 1 1/2 cups cheddar cheese blend, shredded

  • 1/4 cup real bacon bits


Directions:

  1. Preheat your oven to 400°F (200°C) to ensure it’s ready for baking once the casserole is assembled.

  2. In a medium saucepan, bring the water and milk to a boil. Once boiling, remove the saucepan from the heat and stir in the garlic-flavored instant mashed potato powder until smooth. Set the prepared mashed potatoes aside while you prepare the meatloaf layer.

  3. In a large mixing bowl, combine the ground beef, diced onions, brown sugar, and Worcestershire sauce. Use your hands to mix the ingredients until they are well combined.

  4. Add the seasoned Italian bread crumbs and the egg to the meat mixture. Continue mixing with your hands until everything is evenly incorporated.

  5. Press the meat mixture evenly into an 8-inch square baking dish, creating a uniform layer. This will form the base of your casserole.

  6. Using a rubber spatula, spread the prepared mashed potatoes evenly over the meat layer.

  7. Sprinkle the shredded cheddar cheese blend over the mashed potatoes. Ensure an even layer of cheese to cover the entire surface.

  8. Top the cheese with real bacon bits, adding a crunchy, savory element to the dish.

  9. Cover the baking dish with aluminum foil to prevent the top from browning too quickly. Bake the casserole in the preheated oven for 30 minutes.

  10. After 30 minutes, remove the foil and continue baking for an additional 10 minutes. This allows the cheese to melt and the bacon to crisp up.

  11. Once baked, remove the casserole from the oven and allow it to cool for a few minutes. This helps the casserole set, making it easier to slice.
