Crispy Zucchini Slices

For a quick and tasty snack or side dish, this Crispy Zucchini Recipe is the perfect choice.


Ingredients:


  • 2 zucchini

  • Salt to taste

  • Black pepper to taste

  • 100 grams of Parmesan cheese, grated

  • 1 teaspoon marjoram

  • 1 teaspoon paprika

  • 3 eggs, beaten

  • 100 grams of breadcrumbs

  • 50 grams of flour

  • Olive oil for frying


Directions:


Prepare the Zucchini:

  1. Slice the zucchini into rounds or sticks and place them in a bowl.

  2. Sprinkle with salt and let them sit for a few minutes to draw out excess moisture.

  3. Squeeze the liquid from the sliced zucchini using a clean kitchen towel or cheesecloth.


Prepare the Coating:

  1. In one bowl, mix together the breadcrumbs and flour.

  2. In another bowl, beat the eggs and mix in the grated Parmesan cheese, marjoram, and paprika.


Coat the Zucchini:

  1. Coat the zucchini in the flour and bread crumb mixture, ensuring they are well-coated.

  2. Dip each zucchini piece into the egg mixture with cheese, coating thoroughly. Sometime I dip the Zucchini in the egg mix first.


Fry the Zucchini:

  1. Heat olive oil in a frying pan over medium heat.

  2. Fry the coated zucchini for 2-5 minutes on one side, depending on thickness, until golden brown.

  3. Carefully turn the zucchini over and cook on low heat, until fully cooked and crispy.


Serve:

  1. Remove the zucchini from the pan and place them on paper towels to drain any excess oil.

  2. Serve hot and enjoy your crispy zucchini slices as a delightful snack or side dish!

  1. Cooling: Allow leftover crispy zucchini to cool completely at room temperature before storing to prevent condensation and maintain crispness.

  2. Refrigeration: Store cooled crispy zucchini slices in an airtight container lined with paper towels in the refrigerator. They can be stored for up to 2 days.

  3. Reheating: To reheat, place the zucchini slices on a baking sheet and bake in a preheated oven at 350°F (175°C) for about 5-7 minutes until heated through and crispy.

  4. Avoid Freezing: Crispy zucchini does not freeze well as it may become soggy upon thawing due to its high moisture content.
