This recipe can be easily adjusted to serve any number of people. The quantities provided in the recipe are for approximately 1 pound of protein and assorted vegetables, which can typically serve 2-3 people, depending on their appetites and additional side dishes.


Ingredients:

  • 1 pound of your favorite protein (chicken, beef, shrimp, tofu, etc.), cut into chunks

  • Assorted vegetables, chopped (such as potatoes, carrots, bell peppers, onions, zucchini, etc.)

  • Olive oil

  • Salt and pepper

  • Seasonings of your choice (garlic powder, paprika, Italian seasoning, etc.)


Instructions:

  1. Prepare the foil packets: Tear off sheets of heavy-duty aluminum foil, large enough to wrap around the ingredients and fold closed.

  2. Layer ingredients: Place a portion of your chosen protein and assorted vegetables in the center of each foil sheet.

  3. Season: Drizzle with olive oil and sprinkle with salt, pepper, and any desired seasonings.

  4. Wrap: Fold the sides of the foil over the ingredients, then fold the top and bottom edges together to seal the packet tightly, leaving some room for steam to circulate.

  5. Cook over the campfire: Place the foil packets directly onto the hot coals or on a grill grate over the fire. Cook for about 10-20 minutes, depending on the thickness of the protein and the desired level of doneness, flipping once halfway through cooking.

  6. Check for doneness: Carefully open one packet to check if the protein is cooked through and the vegetables are tender.

  7. Serve: Open the foil packets and enjoy your delicious campfire meal straight from the foil or transfer to plates.
