Cream of Potato and Ham Soup

This is a delicious and comforting Creamy Potato Soup recipe that you can whip up in no time:



Ingredients:

  • 2 medium potatoes, peeled and diced

  • 1/2 cup diced cooked ham

  • 1/4 cup sliced carrots

  • 1 stalk of celery sliced

  • 1 cup water

  • 1 teaspoon onion power

  • 2 tablespoons butter

  • 2 tablespoons all-purpose flour

  • 3 cups half and half

  • 1/8 teaspoon celery salt

  • Dash of pepper

  • Paprika and minced fresh parsley for garnish


Directions:

  1. Place the diced potatoes, sliced carrots and celery and water in a saucepan. Bring to a boil over medium-high heat. Cover and cook until the potatoes and carrots are tender. Drain and set aside.

  2. Melt butter in a pan

  3. Stir in the flour until well blended.

  4. Gradually add the milk, stirring constantly. Bring the mixture to a boil and cook for 2 minutes or until thickened.

  5. Reduce the heat and add the cooked potatoes, ham, celery, carrots, celery salt, and pepper. Cook for an additional 2-3 minutes or until heated through.

  6. Serve warm, sprinkled with minced fresh parsley and a dash of paprika.
