My Mom always made extra mashed potatoes so there would be leftovers to make these. It does not take much to make then so save your leftover potatoes, and make extra, even the instant will do but regular potatoes are best. Make sure you let them brown well before turning.

Different potato varieties should be used for different dishes. Floury or starchy potatoes (such as Russet and King Edward) work well for mashing and baking. They have a soft, dry texture when cooked and are not suitable for just boiling as they disintegrate. See More Choose The Right Potato
